Low FODMAP Waffles: Gluten-Free and Lactose-Free



 

Low FODMAP Waffles Recipe

MAKES: 4 Belgian-style waffles

PREP TIME: 5 minutes active plus 30 minutes of resting time

COOKING TIME: 3 - 5 minutes per waffle

INGREDIENTS:

- 1 cup lactose-free cottage cheese, undrained

- 6 large eggs

- 1/4 cup canola oil

- 1 teaspoon vanilla extract

- 1/2 cup all-purpose gluten-free flour

- 1/4 teaspoon salt

- 1 teaspoon baking powder

COOKING INSTRUCTIONS: 1/ Place all ingredients in blender. Blend to combine.

2/ Allow batter to rest for 30 minutes before cooking.

3/ Prepare waffles according to waffle iron manufacturer’s instructions.

4/ Keep cooked waffles warm in a 200 degree oven, while preparing additional waffles. Place waffles directly onto oven racks to maintain crispy surface.

5/ Serve warm with maple syrup and salted butter.
